Keto Chole Bhature(Veg & Eggless)

Chole Bhature is an Indian cuisine of the Northern areas. It is basically a Chickpea gravy served with Fried bread and the Keto version is no less. Our Keto chickpea is Radish. Oh yes, So make and relish your taste buds. 

Preparation time: 10 mins
Sitting time for the dough 1-2 hrs
Cooking time: 15 mins
Serves: 3

Ingredients
For the Chole
Radish cubes 150g (chickpeas ) 
Black peppercorns 4-5 
Big Cardamom 1
Clove  2
Cinnamon stick 2
Bay leaf 1
Cumin seeds 1 tsp 
Ginger julienne I tsp 
Teabag 1
Salt 1 tsp
Asafoetida 1/2 tsp
Chole masala 1tsp
Ghee 2 tsp 
Water as required 

For the Bhature dough
Almond flour 100g
Xanthan gum 3 tsp 
Salt 1tsp 
Citric acid 1/2 tsp 
Hung curd  2 tsp 
Oil 2 tsp 

Oil for frying

For Garnishing
Coriander leaves finely cut
Slices of onion, tomato, cucumber 
Green chilli

Method 
For the Chole
Heat a pressure pan.
Add ghee to it.
Then add all the dry masalas viz Cinnamon stick, Cardamom, cloves, peppercorns, bay leaf and Cumin seeds. 
Saute it.
Add Radish ala our chickpeas. 
Add Chole masala  salt, and ginger juliennes, mix it
Then add water. 
Lastly, add the Teabag. 
Cover and give a 2-3 whistle. 


For the Bhature 
In a bowl mix all the dry ingredients, then add hung curd oil and make a soft dough. 
Keep it aside for 2 hrs and then divide into 6 balls
Roll it with a rolling pin with little oil. 
Fry the Bhatures one by one. 
Serve hot with Chole garnished with coriander leaves and Salads like onion cucumber and tomato and especially the green chilli. 


Note: If using homemade almond flour then sift it through a fine sieve., and then use the sifted portion for the dough.

  1. I tried to make this twice but the bhature do not puff up like yours. I even tried reducing the oil because the dough was so oily, but still they do not puff up.

    I used exact measurements. First time the bhaure was too sour. Second time I reduced citric acid to just a pinch. That made it better tasting but still does not puff up like yours.

    Any suggestions?

    1. You have to knead the dough very well, secondly see that the flour is fine or pass it through a sieve and it will work.
