 Keto Veg Mushroom Risotto
An Italian main dish which is my favourite. And when incorporated with Cauli-rice instead of Arborio rice, it tasted much better. Try it, you will give 100/100.

Ingredients 
Chopped Mushroom slices 100g
Finely Grated cauliflower or Cauli-rice 150 g
Chopped Zucchini 40g
Broccoli slices 30g
Chopped Red Capsicum  30g
Grated Cheese 40g 
Finely chopped Garlic 2tsp
Olive oil 2tbsp
Water 3tbsp
Chilli flakes 2tsp
Thyme herb fresh or dry about 2tsp
Salt to taste

Method:
  • In a nonstick pan heat the olive oil. 
  • Then add garlic, fry for 1 min. 
  • Add 1 tsp chilli flakes and 1tsp thyme. 
  • Then add all the cut vegetables and mushroom 
  • Saute all the vegetables for 2 Mins. 
  • Now add the Cauli-rice and salt. 
  • Mix and then add grated cheese and mix well.
  • Add 2tbsp water, cover and cook for 2 Mins.  
  • Saute until the cheese melt. 
  • Serve in a bowl decorated with Chilli flakes and fresh thyme.
