Keto Muthiyas (Veg)


It is a famous Gujarati Dish, Which is loved by everybody around the world.The normal style is very time consuming,  but the keto version is very quick and tasty too. It is high in good Omegas and is glutenfree, Grain-free, and Diabetic friendly.

Serves: 4

Ingredients  
Chopped Fenugreek leaves 1 cup
Flaxseed flour 1 cup
Psyllium husk 1 Tsp
Hung Curd/coconut curd 1tbsp
Salt 1/2 Tsp
Chilli powder 1 Tsp
Oil 2 tbsp
Cumin seeds 1 tsp
Soda a pinch
Water for dough

For Tempering:
Oil 2tbsp
Mustard seeds 2 tsp
Curry leaves 8-10
Sesame seeds tsp
Asafoetida 1/2tsp
Salt 1/2tsp
Green chillies 8-10 cut into 2

Method
  • In a bowl mix flaxseed flour, psyllium husk, salt, red chilli powder, soda and cumin seeds thoroughly.
  • Then add fenugreek leaves, oil 1&1/2tbsp, hung curd, mix it.
  • Then add water slowly, and knead a soft dough ( Flaxseed and psyllium both absorbs lots of water ) 
  • Now apply oil on your palms and make small balls or cylindrical shapes and put it on a microwavable plate.
  • Now microwave in a plate with a bowl of water for 2.30 Mins. ( we are steaming it so using water in a small bowl so that the Muthiyas don't dry up ) 
  • Take it out from the microwave. 
  • Now we are going to temper it. 
  • In a Pan add oil 2 tbsp.
  • Add mustard seeds let it splutter.
  • Then add curry leaves, sesame seeds asafoetida and green chillies, stir fry for 1 min. 
  • Then add the steamed Muthiyas and saute.
  • Add salt and saute until crisp, about 5 mins on medium flame. 
  • Serve it on a plate. 
           
Recipe Notes: 
You can steam it in a vessel too, just grease a rimmed plate and put the Muthiyas on the pan, cover and steam it in a steamer or deep pan with the 1/4th water level in the pan for 10 mins.
