Bombay Badam Roti is a very famous Indian sweet or dessert of Mumbai. You can also call it a semi-soft Cookie too, as it is crisp from outside and soft from inside. It is made with Almonds.
Preparation time:10 mins
Cooking time:15 mins
Makes 14 - 16 pieces
Ingredients
Almond flour 1 cup (recipe )
Sugarfree xylitol 1/3 cup
Cardamom powder I tsp
Saffron strands 6 - 7 steeped in 1 Tbsp cream
Fresh Cream 2 tbsp
Water 1 Tbsp

Method
- In a mixing bowl, add almond flour, xylitol, Cardamom powder and mix well.
- Then add saffron cream and mix
- Then with the use of cream make a soft dough.
- Now grease your palms and apply a hint of ghee on the dough and knead the dough, till its pliable.
- Then roll it between two parchment sheets 3 mm thick.
- Meanwhile, preheat the oven to 200 C
- Then with a cookie cutter press on the rolled dough and cut the rolled dough.
- With the leftover dough, again roll it between the sheets and cut with the cookie cutter
- Transfer the cut moulds on an oven-safe plate or tray leaving some space between each piece.
- Now bake it for 15mins and take it out from the oven.
- Let it cool and transfer it into a box
- It can be stored outside for 4-5 days or refrigerate and can be eaten for 15 days.
Note: Non-ketoer can add sugar 4 tbsp instead of sugarfree.
