Keto Bottle gourd Cheesy Pasta


In India, during Summer Zucchini is difficult to get, it is rarely available. So tried these Bottle gourd Pasta. And you have to make it believe the awesomeness of it. 
Bottle gourd is one vegetable which I found after potato can add bulk to your Menu. So Off goes the Zucchini. Make it and enjoy it. And a good way of making children eat this vegetable. So keto or No keto enjoy it.

Ingredients 
Bottle gourd juliennes 250g
Garlic finely chopped 2 Tsp
Herb Basil 10 - 12 leaves
Cheese grated 100g
Chilli flakes 1 Tsp
Water 1 Tbsp
Salt to taste
Black pepper powder 1 Tsp

Method 

  • Take out the juliennes of the bottle gourd
  • You can also use a standard vegetable peeler and make flat noodle type too.
  • Stack the basil leaves on top of each other, leaving some for garnishing, and roll the stack and chop it finely. 
  • Heat a nonstick pan.
  • Add olive oil, garlic, stir and then add chopped basil leaves and red chilli flakes. 
  • Stir it, turn to medium heat,
  • When the oil begins to bubble around the garlic add the bottle gourd noodles.
  • Toss the noodles and cook until al dente — they should be wilted, but still, have a crunch; 2 to 3 minutes. Do not let the noodles cook any longer or else they will become mushy.
  •  Stir in the salt and grated cheese.
  • Add 1Tbsp water and Saute again. 
  • As they cook, keep tossing so that all the bottle gourd noodles gets mixed up thoroughly. 
  • And it's done add black pepper powder and mix it. 
  • Use pasta tongs to transfer the noodles, to a serving dish.
  • Sprinkle some chilli flakes according to taste.
  • Decorate with basil leaves and serve hot.

  2. Pasta and carbs go together like happy and hungry. They're best friends and do everything together: pasta and carbs go kayaking, they play together in their backyard, they're absolutely inseparable. So when I discovered that I can have my pasta without carbs I was ecstatic to say the least. You can think of this carb free pasta as 'zoodles' but without the zucchini. I used this gorgeous bottle gourd because it was so light and easy to slice without getting too much 'gourd.' I was very tempted to add some cream but I knew that I wanted this to be keto-friendly and creamy enough without making it heavy.
