Keto Kerala Style Veg Stew


India is truly a land of flavours, any corner you travel, you are bound to found hundreds of mouthwatering dishes with distinctive flavours. One such dish is Kerala style Veg stew. And here we will make the Keto version of it.

Ingredients 
Cauliflower florets 5 - 6 pieces
Red Capsicum chopped 20 g
Yellow Capsicum chopped 20 g
French Beans 20 g
Paneer small cubes 100 g 
Coconut milk 3 tbsp
Curry leaves 4 - 5
Cloves 2 pc 
Cardamom 2 pc
Cinnamon 1 stick
Mustard seeds 1 tsp 
Ghee 1 tbsp
Ginger chilli chopped 1 Tsp
Salt to taste
Mustard powder optional
Water 1/2 l

Method

  • In a heated pan, add ghee, then add cloves, Cardamom, cinnamon stick and stir. 
  • Then add mustard seeds, and stir and add curry leaves. 
  • Then add chopped green chillies and ginger, and saute. 
  • Then add all the vegs, add salt and Turmeric and 1 tsp of coconut milk, Saute and add water. 
  • Cover and cook until vegetables are tender. 
  • Then add the remaining coconut milk and stir to a boil, stirring continuously, for 2 - 3mins.
  • Then take it out in a serving bowl.
  • Sprinkle some fresh finely chopped coriander leaves and serve hot.
