Keto Sponge gourd or Tori Hummus

In the summertime, the most easily and cheaply available vegetable is Sponge gourd ala, Tori. 
Keto Sponge gourd Hummus is a gluten free,  grain free, lactose-free dish. You can serve with Nachos, cheese sticks, vegetable sticks such as cucumber, radish, etc. It is an easy dish and less time consuming and can be easily prepared in minutes. 
So next time You want to have a Lebanese Cuisine instantly, you do not have to wait for the chickpea to get soaked overnight and then boil, and then make Hummus. You can make it instantly.

Preparation time: 10 mins
Cooking Time: 5 mins
Serve: 4

Ingredients:
Sponge gourd 250g
Garlic cloves 4
Sesame seeds 1 tbsp
Olive oil 1& 1/2 tbsp
Kosher salt (sea salt) 1 Tsp
Red Chilli flakes 1 Tsp
Lemon juice 2 Tsp
Grated cheese 20g 

Method:
  • Remove the skin of the sponge gourd by a peeler, and cut into cubes.
  • Microwave it for 3 mins, or steam it in a steamer
  • Now in a mixer grinder add sesame seeds, churn it,
  • Then add cloves of garlic sponge gourd pieces, salt, olive oil half the quantity, cheese and salt.
  • Churn it, and grind it fine.
  • Now take it out in a serving bowl.
  • Sprinkle chilli flakes on top 
  • Drizzle the remaining Olive oil, and serve.

You can use it as a dip, or as a spread on your bread, tortillas, etc.
