Keto Spinach Uttapam (Eggless)

Uttapam or South Indian Savoury pancakes are one of my favourites, and the keto version is also yum. Do try it, you will love it. I Have made with spinach, one can make without it even. Enjoy!!!


Preparation Time: 10 mins
Cooking Time: 15 mins
Serves: 6 pieces

Ingredients
For the Paste
Spinach finely chopped 200gm
Ginger slices a few
Green chilli 1
Psyllium husk 1/2 - 1&1/2 tsp
Salt
Paneer/cottage cheese grated 200g
Oil 2 tbsp

For the Uttapam
Cumin seeds 1 tsp
 Red chilli powder 1 tsp
Oil for cooking 2 tbs
Onion finely chopped 50g
Tomatoes finely chopped 50g

Method
For the Paste

  • Steam the spinach in the microwave for 3 mins or steam it on the gas stove for 5 mins. and remove the water as much possible by squeezing out.
  • In a mixer jar, add the spinach, ginger pieces, green chillies, salt, psyllium husk, paneer and oil.
  • Churn it too a fine paste.
  • Take it out in a bowl

For the Uttapam
  • In the paste, add cumin seeds, Red chilli powder, and mix it thoroughly.
  • Heat a tawa or flat pan.
  • PUT a ladleful of batter. Just spread it a bit to a small size pancake or chilla
  • Sprinkle some onions and tomatoes.
  • Add some oil.
  •  Toss and turn carefully and let it cook from both the sides.
  • Take it out on a plate
  • Serve this with green chutney or coconut chutney and ENJOY!!!
