Keto Curd Rice | Dahi Rice


Curd rice is a delicious south Indian cuisine and it is also comfort, probiotic-rich food. This dish is a gut-friendly dish and very easy to make also. The keto version taste is also almost the same. Enjoy!!!


Preparation time: 10 mins
Cooking time: 5 mins
Serve:1

Ingredient
Cauliflower rice 150g
Hung curd 2 tbsp
Cream 1 tbsp
Salt 1/2 tsp
Water as required

For Tempering
Ghee 1 &1/2 tsp
Mustard seeds 1 tsp
Peanuts 1 tbsp optional
Green chillies  finely chopped 1/2 tsp
Ginger  finely chopped 1/2 tsp
Asafoetida powder 1/4 tsp
Curry leaves a few pieces

Method
In a Microwave safe bowl add the salt to the cauli-rice and mix it.
Steam it for 2 mins covered in the microwave or a gas stove.
Now let it cool.
Add the other ingredients and mix well.
Add water depending upon the consistency required according to the preference.

For the tempering
Heat a nonstick pan add ghee
Then add the mustard seeds and then the peanuts.
Saute both until the peanuts get crispy.
Now add the green chillies, ginger and saute again.
Add the curry leaves and saute again.
Then add asafoetida powder and shut the stove.
Now pour this tempering on the curd rice.
