Keto Rabdi | | Rabri | Keto Dessert

Rabdi|Rabri is an Indian dessert or sweet which is a very tasty and yummy dessert. It is basically a very high carb dessert,  but the keto version is just the opposite. The keto Rabdi is very low in carb and very easy and a quick recipe to prepare.



Preparation time: 5 minutes
Cooking time: 15 minutes
Serves: 4

Ingredients 
Almond milk 100g
Fresh cream 100g
Fresh Paneer/Cottage cheese 100g
Saffron strings 7-8 steeped in 1 tbsp almond milk
Cardamom powder 1/2 tsp 
Erythritol powder 1/2 cup
Almonds, pistachios sliver a few pieces 
Rose petals fresh or dried a few (optional)

Method 
In a pan put almond milk, and then the cream and stir when bubbles start appearing then add the paneer and mix it thoroughly.
Then add the sweetener.
  Let it cook for 10 mins until it becomes half.
Then add the saffron milk and the cardamom powder.
Mix it and take it out in a bowl.
Refrigerate it for 2 to 3 hours.
Serve cold in small bowls, garnished with chopped almonds and pistachios.
