Mixed Vegetable Barley Khichdi | Weight Loss Recipe

Barley is one grain which is actually a Superfood. This Mixed vegetable Barley khichdi is a power-packed complete meal, full of fibre, vitamins and minerals too. A healthy meal for weight loss and plus a very good choice for Diabetic people as it has a low glycemic index.

Cooking time: 15 mins
Serves: 4

Ingredients
In the order
Ghee 1 tsp
Cumin seeds 1 tsp
Bay leaf 1
Cardamon 2
Cinnamon stick 1
Cloves 3
Asafoetida powder 1/2 tsp
Green chillies finely chopped 1 tsp
Ginger finely chopped 1 tbsp
Barley soaked overnight 1/2 cup
Yellow split dal 1/4 cup
Turmeric powder 1/2 tsp
Red chilli powder 1/2 tsp
Salt 1 tsp
Coriander powder 1 tsp
Boiling hot water 2 cups
French beans 50g
Cauliflower florets 50g
Carrots chopped 50g
Pumpkin chopped 50g
Peas 25g

Method
In a pressure pan adds in the ingredients in the order mentioned and saute it in between.
Give 2 whistles
After the pressure is released from the pan
Take it out
Serve hot with roasted papads.
