Quinoa Kothambir Vadi | Glutenfree Quinoa Coriander Fritters

Kothambir Vadi is a traditional Maharashtrian savoury dish. Kothambir is called Coriander leaves in Maharashtra and I have given it fusion and made it with the so very healthy Quinoa flour. Do make and Enjoy!!!

Cooking time: 30 mins
Serves: 3

Ingredients
Coriander leaves finely chopped  & washed 1 & 1/2  cup
Ginger Chilli paste 1 tbsp
Turmeric powder 12 tsp
Red chilli powder 12 tsp
Salt 1 tsp
Quinoa flour 1 cup
Rice flour 1 tbsp
Water 4- 8 tap as required
Oil 3 tbsp

Method
  • In a mixing bowl add the finely chopped washed and towel rubbed coriander leaves.
  • To it add all the spices.
  • Mix it thoroughly.
  • Now add the quinoa flour little by little and mix into the leaves. Add in the rice flour too.
  • Mix it thoroughly and with the help of little water knead a tight dough.
  • Now drop some oil and grease your palm
  • Now divide it into two portions and roll out a cylindrical log type.
  • Now heat a pan or steamer with water and place these dough logs on a plate/steamer plate and cover and cook for 15 mins.
  • After 15 mins take it out and ket it cool.
  • Now slice into 1/2 inch pieces
  • Heat a nonstick pan and add oil to it.
  • Place the sliced pieces and cook on medium flame until crisp from both the sides.
  • Serve hot.
  • Enjoy!!!
