Savoury Eggless Muffins | Cheesy Veg Muffins

Breakfast Muffins is the best thing to prepare. It is a go food in my house when time is less, I rely on these savoury muffins too much. Easy to prepare and done in the oven and also easy to carry food, just pick up and you can fill your tummies while travelling or doing some other work. 


Preparation time: 15 minutes
Cooking time: 20 -25 minutes 
Serves: 12 pieces

Ingredients
Step 1
Flaxseed flour 1 tbsp
Water 3 tbsp

Step 2
Milk 1/2 cup
Oil 1&1/2 tbsp
Hung curd 2 tbsp
Garlic 1/2 tbsp
Capsicum coloured or any finely  chopped 60g
Corn kernels 39g
Pumpkin grated 60g
Green onions finely chopped 20g
Cheese grated 60g
Salt 1 tsp

Step3
Wheat flour 1 cup
Baking powder 1&1/2 tsp

Method
Step 1

  • Mix flaxseed flour in water and keep it aside.


Step 2

  • In a mixing bowl add all the ingredients one by one mixing each ingredient well.


Step 3


  • In a separate bowl sieve the wheat flour and baking powder so that it gets airy as well mix with each other.


Finale

  • Preheat  the oven to 180°c
  • Mix the flax egg to the wet ingredient bowl that is the vegetable mix bowl.
  • Mix it thoroughly.
  • Then add the dry ingredient flour mix in parts and mix it.
  • Now grease the muffin tray or silicone mould.
  • Drop 3/4  mixture into each mould and put it to bake for 20.. 25 mins.
  • Take it out and let it cool.
  • Enjoy!!!


Recipe Notes:


  • One can carry as in lunch, a good day travel food also.
  • It can be stored in the refrigerator for 1 week and enjoyed.
