Ingredients
Quinoa 1/2 cup
Water 1 cup
Milk 2 cups
Cornflour/tapioca flour 1 tbsp
Water 1 tbsp
Cinnamon 1 tsp
Sugar/sugarfree sweetener 4 tbsp
Method
- Take the quinoa seeds in a sieve and wash it under running water thoroughly.
- Now in a deep pan with cover drop the washed quinoa into it
- Add water and cover and cook for 10 minutes until tender.
- Uncover and add milk and let it boil for 10 mins.
- Add cornflour mixed in water.
- Cook for another 5 mins.
- Add cinnamon powder and mix it thoroughly
- Add rose water too.
- Let it cook for 2 mins.
- Add sugar or sugarfree of your choice and stir it until it dissolves
- Shut the stove and let it cool.
- Chill it in the freezer for 2-3 hours before serving to enjoy it.
- Serve it in the pudding bowl garnishing with sliced pistachios and fresh or dried rose leaves.

Serves: 6 pieces
Ingredients
Wheat Vermicelli fine 100g
Butter 50g
Paneer grated 100g
Cheese mozzarella 40g
For the syrup
Water 1/2 cup
Sugar1/2 cup
Lemon 1/2
Finale
Pistachios granulated 20g
Method
- In a mixing bowl break the vermicelli holding between 2 palms and rubbing it.
- Break it into smaller pieces.
- Now add butter and rub it into the vermicelli.
- Now take a baking dish about 4 inches and rub it with butter.
- Meanwhile preheat the oven to 180°c.
- Now into the baking dish drop 1/2of the vermicelli mix into it and press it to form an even lining of it.
- Now spread the paneer layer over it.
- Press thus layer also and make an even surface.
- Now spread the cheese over it and press it evenly.
- Now spread the remaining vermicelli over it and pressing evenly.
- Put it for baking at 180c for 25 mins.
For the syrup
- While the kunafa is being baked, we will prepare the syrup
- Now heat a pan and add the sugar and water, add the lemon juice.
- Let it boil for 5 -7 mins, stirring it in between.
Finale
- Take out the baking dish from the oven
- Spread 1/2 of the prepared sugar syrup over it. Let it rest for 15 mins.
- Loosen the side.
- Transfer it onto the plate upside down.
- Again spread the remaining syrup over it.
- Decorate with granulated pistachios
- Serve warm or chilled.

3.Shrikhand Tiramisu
Preparation time: 20 mins

Ingredients
Step 1
Hung curd/greek yogurt 400g
Sugar powder/sugarfree 1/4 cup
Cardamom powder 1 tsp
Nutmeg powder 1/8 tsp
Step 2
Milk 1 tbsp
Saffron strings
Finale
Cookies 1 packet 200g
Milk 2 tbsp
Almond slivers 3 tbsp
Pistachios 1 tbsp
Saffron strings a few for decoration optional
Method
Step 1
- Soak the saffron strands in warm milk.
- In a mixing bowl take the hung curd to add sugar powder or sugarfree powder to it, whichever is allowed.
- Now add the cardamom and nutmeg powder to it and give it a good mix
- Transfer 2/3of the content in a piping bag.if you don't have a piping bag, don't worry you can use a spoon to put the mix. So this is my Poping bag 1
- Now add saffron milk to the remaining shrikhand and give it a good mix.
- Transfer the saffron shrikhand into another piping bag. Now this is my piping bag 2
- Keep it aside.
- Now take the small pudding glasses.
- Do the cookies in the milk and place the cookies inside.
- Now pipe the mix of the bag no 1 and cover the cookies in each glass.
- Then sprinkle a layer of almond slivers.
- Then again the cookie layer and then the mixture of piping bag 1 and almond sliver layers.
- Then again cookie layer and finally the piping bag 2 mixes on top of each glass.
- Garnish it now with a layer of pistachio slivers on the sides of the glasses, in the middle some almond slivers and 2-3 saffron strings.
- Chill it in the fridge for at least 3-4 hrs.
