Keto Surti Undhiyu | Keto Stuffed Vegetable Medley | Vegan/Low carb/Glutenfree

Come winters and a super tasty and full of flavors this Indian Gujarati dish is relished by all. But the keto version takes this dish to one level up. As from now on one doesn't have to wait for winters for this dish, as the vegetables used for the keto version are available all year-round. Enjoy!!!


Preparation time: 20 mins
Cooking time: 30 mins
Serves: 6

Ingredients
Step 1
Corriander 100g
Garlic greens/chives 40g
Coconut freshly shredded 100g
Green chilies finely chopped  1 tsp
Red chili powder 1 tsp
Cumin powder 1 tsp
Salt 1 tsp
Carom seeds1 tsp
Stevia sugar-free 1 tsp
Lemon 1

Step 2
Fenugreek  leaves 20g
Salt 1/2 tsp
Red chili powder  1/2 tsp
Turmeric powder 1/2 tsp
Carom seeds 1/2 tsp
Baking soda 1/2 tsp
Almond flour 1/2 cup
Flaxseed flour 1/2cup
Oil 2 tbsp
Water 1 tbsp or more
Oil for frying

Step 3
Green capsicum 100g
Radish red 50g
Radish white 50g
Brinjals  small 100g
Turnip 60g
Pumpkin 80g
Green beans 30g

Finale
Ghee 2 tbsp
Carom seeds  1 tsp
Asafoetida 1/2 tsp
Red chili powder 1/2 tsp
Turmeric powder 1/2 tsp optional
Water 1 cup
Cumin powder  1 tsp


Method

  • Step 1
  • Mix all the ingredients and keep it aside

Step 2

  • In a big mixing bowl  add in all the dry ingredients and give a good mix
  • Then add in all the wet ingredients except water.
  • Now make a stiff dough out of it using very little water.
  • Shape into a small cylindrical shape as shown in the video to make muthiyas
  • Heat oil in a Kadai and fry these mythical pieces.
  • When crisp take it out and keep it aside.

Step 3

  • Make crisscross slits in the radish and brinjals keeping the base intact.
  • Scoop out the capsicums to be filled from inside.
  • Slice all the other remaining veggies into big pieces.
  • Now stuff the mixture prepared in step 1 in all the vegetables.

Finale

  • Heat a pressure pan.
  • Add ghee to it.
  • Add carom seeds and fry.
  • Add all the other ingredients one by one and stir.
  • Now add the vegetables one by one.in between sprinkle the step 1 masala alternatively when you add a layer of the next veggies.
  • Continue this layering process until you place all the vegetables as shown in the video. Finish off with the remaining masala of step 1.
  • Now pressure cook for 1 whistle.
  • Cool and open the pan and now add the Step 2 Muthiyas prepared in it. Again give a whistle.
  • Let it cool.
  • Serve hot with Keto Tortillas or keto Puri
  • Enjoy!!!
