Keto Til Gajak/Patti | Keto Sesame Brittle | Vegan & Glutenfree

The Indian Festival Makar Sankranti is incomplete without having Til Gajak, that is the Sesame sweet brittle. And being on keto I missed it very much last year. But this year I made it a point to make this the keto version. And this recipe will fulfill your desires as it has fulfilled mine. I am really gorging on it. So simple and too tasty. Make it. Preparation time: 15 mins
Cooking time: 10 mins
Serves: 10 pieces

Ingredients 
Stevia 1 cup
Xanthan gum 1/2 tsp
Water 4 tbsp
Cardamom powder 1/2 tsp
Sesame seeds 1/2 cup
Baking soda 1/2 tsp
Pistachios  finely chopped  1 tbsp

Method

  • Heat a nonstick pan and add the stevia, xanthan gum and water and mix it thoroughly. 
  • Stir continuously and keep on cooking until it forms a gel-like mixture. 
  • Add the cardamom powder to it and mix it.
  • Now add the sesame seeds and mix it thoroughly 
  • Shut the stove and now add the baking soda into it and mix it thoroughly 
  • Transfer the content of the pan on a parchment sheet and press it with a spatula in a thin rectangular sheet shape.

Finale

  • Meanwhile preheat the oven to 180c
  • Sprinkle the pistachios and again press it with the help of another parchment sheet or rolling pins.
  • Slice it into pieces and transfer in a baking tray.
  • Bake at 180c for 10 - 15 mins 
  • Take it out and let it cool completely. 
  • Store in an airtight container. Enjoy!!!

Recipe Notes:
One can microwave for 60-90 seconds instead of baking.
It can be kept at room temperature in an airtight container for a month.
It's a good travel food too.
