Keto Tricolor 3 In 1 Savory Muffins | Eggless & Low Carb

Its a tradition in my house that we make tricolor foods to celebrate the Republic day of India. And being in keto does not mean I am going to be left out. So here comes the Tricolor Savory Muffins for that moment. Also, these muffins are very simple to make,  and I have made the base as the basic ingredients for these muffins. One can make anyone flavor of the three or like me make all the three flavors at a time and enjoy the whole week as it can be stored in the refrigerator too. Enjoy!!!

Preparation time: 20 mins
Baking time: 30-35 mins
Serves: 9 pieces  

Ingredients
Step 1
Flaxseed flour 2 tbsp
Water 5 tbsp

Step 2
Coconut  flour 1 & 1/2 cup
Salt 3/4 tsp
Baking powder 1 tsp
Baking soda 1/2 tsp

Step 3
Oil 1/4 cup
Apple cider vinegar 1 tbsp
Cheese 50g
Garlic finely chopped 1 tsp

Step 4
Raw pumpkin puree 80g
Raw spinach puree 50g

Method
Preheat the oven to 180c

Step 1
  • Mix the ingredients and keep it aside.
Step 2
  • Mix all the ingredients in a big bowl and keep it aside
Step 3
  • In another bowl mix all the ingredient and then add the flax egg preparation of step 1 into it.
  • Mix it thoroughly.
  • Mix the dry ingredients bowl of step 2 with step 3 wet ingredients bowl and give a magic mix.
Step 4
  • Now divide this dough-like batter into 3 portions.
  • In one portion mix the pumpkin puree
  • In another portion mix the spinach puree
  • Keep the 3rd portion is the white color as it is.
  • Now grease the silicone muffin molds, or muffin trays and place paper cups in it.
  • Now in the silicone molds add the green spinach layer first then the white cheese layer and then the orange pumpkin layer.
  • Bake in the oven at 180°c for 35-40 mins
  • Take it out and let it cool down.
  • Then take it out from the silicone or paper cups mold.
  • Enjoy!!!
Recipe notes


  • One can make the single flavor that is the white cheese layer by simply following the same steps till step 3 and bake the muffins.
  • And to make pumpkin/spinach muffins only then simply add the puree in step 3 and mix it. One can add more spices according to choice and create more flavors too.
