Keto Paneer Vegetable Biryani

A very colourful and flavourful recipe which is totally ketofied. It is a complete meal fulfilling all the macros needs too. Enjoy!!!

Preparation time: 10 mins Cooking time: 20 mins Serves: 4

Ingredients
Step 1
saffron strings a few pieces
Warm water 1 tbsp

Step 2 
Paneer/cottage cheese 100g
French beans 30g
Cauliflower  50g
Red capsicum 40g
Hung curd 1 tbsp
Salt 3/4 tsp
Red chili powder 1/2 tsp
Black pepper powder 3/4 tsp
Cumin powder 1 tsp
Garam masala powder/5 spice powder 1 tsp
Nutmeg powder 1/4 tsp
Kewra essence 4-5 drops/rose water 1 tsp
Turmeric powder 1/2 tsp

Step 3
Ghee 3-4 tbsp
Cumin seeds 1 tsp
Ginger finely chopped 1 tsp
Green chillies finely chopped 1 tsp
Garlic finely chopped 1 tbsp
Cauli-rice 300g
Cream 25g
Onions fried 5g
Coriander & mint leaves a few 
Ghee 2 tsp

Finale
Fried onions 5g

Method
Step 1
  • Soak the saffron threads in hot water.
Step 2  
  • In a big bowl add in all the ingredients and marinate it.
Step 3
  • Heat a nonstick deep pan ie earthenware.
  • Add the ingredients in order and stir one by one
  • Add the marinaded vegetables into it.
  • Saute, cover and cook for 10 mins.
  • Add the cauli-rice and spread it over the vegetables.
  • Add the cream and spread it out.
  • Sprinkle the saffron water over it.
  • Add the coriander and mint leaves.
  • Add the fried onions.
  • Now cover the vessel with aluminium foil and seal the pan and put a cover on top of it.
  • Let it cook on a slow flame for 10 mins.
  • Shut the stove and carefully remove the aluminium foil.
Finale
  • Serve on a plate.
  • Sprinkle little fried onions on top of it.
  • Serve with masala curd or granita
  • Enjoy!!!
