Keto Vegetable Hotpot | Keto Loaded Soup

A very simple and easy recipe, which can be made in a jiffy and perfect for this awesome weather. The garlicky flavour will mesmerise you. A dish which I had many a time during my weight loss journey. Enjoy!!!


Preparation time: 5 mins 
Cooking time: 10 mins
Serve: 2

Ingredients

Oil 2 tbsp

Garlic 1 tbsp

Green chillies 4-5 pieces

Green beans 30g

Salt 1 tsp

Capsicum green 40g

Capsicum yellow 40g

Capsicum red 40g

Cauli-rice 200g

Xanthan gum 1/2tsp


Method 
  • Heat a pan add oil to it.
  • Then add the finely chopped garlic into it. Saute it.
  • Then add the green chillies and the rest of the veggies and saute it intermittently.
  • Now add salt and then add the cauli-rice into it.
  • Add water and cover and cook.
  • Now in a small bowl make a gel if xanthan gum with little water. Drop that mix and adjust the water with the type of slurring you want. Give a boil.
  • It's done
  • Serve hot
  • Enjoy!!!!
