Manakish The Lebanese Cuisine

Manakish the name has such a beautiful resonance, and equally the taste. Have it with some sour cream or like this. A good option for any meal of the day. Enjoy!!!


  
Preparation time: 20 mins
Resting time: 2hrs
Cooking time: 7-10 mins/batch
Serve: 10

Ingredients

Sugar 1/2 tbsp

Dry yeast 1.5 tsp

All purpose flour 1.5 cup

Oil 2 tbsp

Salt 1 tsp

Zataar spice 4 tbsp

Olive oil 2 tbsp

Cheese 50g

 

Method 

  • In a small bowl add sugar and 3 tbsp warm water, mix it.
  • Now add the dry yeast and mix and keep it aside for 15 mins, to activate the yeast
  • In another mixing bowl add in the all-purpose flour, salt and then make a well and add in the oil.
  • Give a magic rub and let the oil get coated in the flour.
  • Now drop the yeast mixes and makes a soft dough with water.
  • Now dust the floor with oil and stretch the dough for 5 mins so that the gluten activates.
  • Now tuck in the dough and keep it in a big greased bowl and cover with cling foil for 2 hrs.
  • After 2 hrs remove the foil and again  give a knead.
  • Divide the dough into small portions.
  • Now take zaatar spice 4 tbsp and olive oil 2 tbsp.
  • And add a little salt.
  • Give it a magic mix.
  • This you can prepare days ahead and keep it ina container, so that the flavours come out well.
  • Now spread the portions of dough on a parchment sheet or baking tray, to form thick tortillas.
  • Spread the zaatar mix over each portion.
  • Spread grated cheese on top of it. Now grill for 7-10 mins.
  • Take it out.
  • Serve hot
  • Enjoy!!!
