Keto Chebakia I Low Carb Moroccan Cookies


I love having cookies n dreams.
Well, that is the best thing to do in such tiring times. These Moroccan cookies are very flavourful, and I made a confusing shape, where when these are picked up as thinking salty(the cracker style) would turn out to be sweet and delicious. Just what the Chebakias are meant to be. Keep you confused.
Mind you that's not the original shape of these keto Chebakia cookies. Yes, they are the Chebakia cookies, but in a straight way. Beating around the bush to like Taming of the Chebakia.😂 I have tamed them literally 🤓

Cooking Time: 10 mins

Ingredients
Sesame seeds 1/4 cup Star anise 1 Cinamon stick 1 Yeast 1/2 tsp Stevia sugarfree 1 tsp warm water 1 tbsp Rosewater 1 tbsp Saffron 8-10 strands
Almond flour 1.5 cup Baking powder 1/2 tsp Xanthan gum 1/2 tsp Oil 1 tbsp Water 2 tbsp
Stevia 1/4 cup

Method

  • Heat a pan. roast the sesame seeds until it swells and you hear a crackling sound.
  • Let it cool.
  • Now in a small mixer jar add the cinnamon stick and star anise and powder it.
  • Add the roasted sesame seeds, again churn it to form a powder.
  • Now make a mix of yeast, stevia, and warm water in a small bowl and keep it aside.
  • Ina small bowl steep saffron strings in rose water.
  • Now in a big bowl take the almond flour, add in the remaining dry ingredients, and the churned sesame mix. and give it a magic mix.
  • Now add the ghee and the yeast and saffron mixture into it.
  • in a small bowl add water about 2 tbsp and the stevia and mix and drop that into the almond flour mix.
  • mix it up and knead a dough.
  • let it sit for 15 mins.
  • now again uncover and knead it.
  • divide into comfortable 2-3 portion.
  • Preheat the oven to 190c
  • Roll out thin between 2 parchment sheets in a rectangular shape.
  • sprinkle some sesame seeds over it and again roll for once.
  • Cut into thin strips. and try to make the original Chebaakia shape or just roll it or bake like me as crackers.
  • Put it to bake at 190c for 12 mins
  • Take it out and let it cool.
  • Enjoy!!!
