Keto Eggfree Choco Doughnuts | Low Carb Donuts

Oh, Donut even think of me sharing these. Go and make yours. Seriously, I would have loved to say this. But lockdown and me the only one following keto has made my plate full of these goodies🍩🍩🍩. Lucky me, at least one benefit of lockdown. I know I may sound mean, but no use punching yourself & others for the lockdown. Better to chill and enjoy. 
So what say. Making yours🍩🍩. 


Preparation time: 10 mins
Cooking time: 15 mins

Ingredients
Step 1
Almond flour 1 cup
Xanthan gum 1/2 tsp
Baking powder 1/2 tsp
Baking soda 1/4 tsp
Salt a pinch

Step 2
Vanilla essence 1/2 tsp
Oil 2 tbsp
Fresh Cream/coconut cream 2 tbsp
Greek yoghurt/hung curd/coconut curd 1 tbsp
Stevia 2 tbsp

Step 3
Chocolate  75% & above 40g
Oil 1 tsp
pistachios 1 tbsp

Method
Step 1
In a mixing bowl add in all the ingredients and give a magic mix.

Step 2 
Mix all the ingredients in a small bowl.
Drop the prepared mix into the dry ingredient bowl.
Mix and knead a soft dough.
Give 5 mins knead and cover for 10 mins
Remove the cover and again give magic knead
Divide the dough  into 2 portions
Put one portion between 2 layers of parchment sheets 
Roll out thick
Cut with a doughnut cutter or with any round cutter
Remove the extra. transfer to a plate.
Alternately take small portions and roll out small balls. flatten a bit and make a hole in between.
They are ready to be fried or to be baked.
Heat oil in a frying pan and fry on medium heat until it takes a beautiful golden colour.
Alternately bake at 180c for 10-15 mins.

Step 3
In a small glass microwave-safe bowl take the chocolate pieces and oil. 
Microwave for 30 secs once or twice. Mix it and it's ready for layering. 
Dip the doughnuts top portion into the melted chocolate carefully and keep it on the parchment sheet or iron rack. 
Sprinkle some pistachios over it. 
Let it set.
