3 Indian Keto Ganpati Delicacies to Enjoy


Ganpati celebration is incomplete, rather Maharashtrian delicacy is incomplete without these 3 special foods. So make these in keto form & enjoy the celebration in full swing. Ganpati Bappa Morya! 

1. Keto Puranpoli

Preparation time: 30 mins in total
Cooking time: 15 mins in total
Serves: 4

Ingredients
For the Dough
Almond flour 1/2 cup
Coconut desiccated/flour 1_4 cup
Psyllium husk 2 tbsp
Salt 1/2 tsp
Oil 1 tbsp

For the stuffing
Yellow Capsicum finely chopped 150g
Almond flour 1/2 cup
Sugarfree stevia 1/4 cup
Cardamom powder 1 tsp
Ghee 1 tsp

Finale
2 tsp ghee

Method
For the Dough
In a big mixing bowl add all the ingredients and give a good mix.
Then with the help of water knead a soft dough.
Cover and keep aside.

For the stuffing 
Heat a nonstick pan and add ghee to it.
Then add the finely chopped capsicum and saute it.
Add salt to it and saute it.
Cover and cook for 5 mins.
Uncover and add the almond flour.
Saute for 2-3 minutes and then add the cardamom powder.
Transfer the mixture into a mixer jar and churn it.
Take the mixture out in a bowl and ket it cool. Then add sugar-free stevia to it and give a thorough mix.
Keep it aside

Finale
Take the dough and knead it again. Divide it into 3 portions.
Now take 2 parchment paper. Grease it with oil and roll out one portion of the dough into thin chapati using either the hand or rolling pins, in between the sheets.
Cut it into a round shape with a cutter.
Now place a portion of the stuffing into half of the circular dough.
Spread it out into a semi-circle leaving edges to press
Now with the help of the parchment sheet covers the other half of the stuffing and press it lightly.
Similarly, do for all the portions. And make another portion with the left out the cut dough from all the Puranpoli even.
Now heat a nonstick griddle pan or tawa and brush it with ghee.
Roast all the Puran polis until golden brown from both sides.
Serve hot.
 Enjoy!!!

Recipe Notes
Cook all the Puran polis and store it in the refrigerator and when required heat it again and enjoy.
The tortilla or the Roti can be had separately without the stuffing even with the gravies.
One can make wraps even with the dough too.

2. Keto Vada Pav

Preparation time: 10 mins
Cooking time: 20 mins
Serves: 6

Ingredients
Paneer /cottage cheese crumbled 200g
Mustard seeds 1 tsp
Curry leaves 4-5pieces
Ginger finely chopped 1 tsp
Green chillies finely chopped 1tsp
Garlic finely minced 1tsp
Turmeric powder 1/2 tsp
Salt 1 tsp
Coriander leaves finely chopped  2 tbsp
Oil 2 tbsp

For the Coating
Almond flour 2 tbsp
Flaxseed flour 1 tbsp
Turmeric powder 1/4tsp
Salt 1/4tsp

Method
Heat a pan, add oil to it.
Add mustard seeds, let it crackle.
Add ginger, green chillies and minced garlic to it.
Saute a bit.
Then add turmeric powder and the crumbled paneer/cottage cheese.
Mix it and then add salt to it.
Saute for 3to 4 mins.
Then add coriander leaves and mix it thoroughly.
Shut the gas stove.
Let it cool for 2 to 3 mins.
Take it out in a bowl and ket it cool.
Now make flat Tikki or Cutlet shapes out of it.
Apply oil over it on both sides with a brush.
Make a mixture of the Coating ingredients and roll each tikki on it.
Heat a griddle and add oil to it. Now shallow fry the coated tikkis/cutlets from both the side.
Take it out in a plate And serve hot like a burger between two slices of bread prepared beforehand.

3. Keto Modaks in 2 flavour

Preparation time: 5 mins
Cooking time: 10 mins
Assembling time: 10 mins
Serves: 6

Ingredients
Flavour 1
Almond flour 1 / 2 cup
Coconut flour 1/4 cup
Psyllium husk 2 tbsp
Stevia 1/4 cup
Ghee 2 tbsp
Cardamom powder 1 tsp
Hot water 3 tsp

Flavour 2
Cocoa powder 1/2 tbsp
Ghee 1 tsp

Method
Heat a nonstick pan and add ghee.
Then add all the ingredients of flavour 1 except water and saute till it becomes toasted, approximately 6-7 mins
Now add water slowly and saute it thoroughly for 2 mins.
Shut the stove and let the mixture cool for 2-3 mins.
Now grease your both palms with ghee and take a small portion of the mixture and bind with your fist and finger to make a tight ball and then shape it into a Modak shape.
I made 3 modak and then proceeded to make the Flavour 2
For Flavour 2
Take cocoa powder and ghee in a bowl and mix them.
Put this mix in the remaining modak mixture and mix it thoroughly.
Now make Modaks from the remaining mixture.
Store it in a box and Enjoy it whenever you feel like, of course after offering it to Lord Ganesha
