My Quick Keto Lunch | Keto Mexican Rice

Some recipes should be easy and simple but tasty. And this keto recipe is very simple and easy and tasty to the core. Enjoy!!!

Serves: 3


Ingredients

Olive oil 2 tbsp 

Onions 30g 

Garlic 1 tsp

Cauli-rice 250g

Salt 1 tsp 

Rosemary herb 1 tbsp

Water 1/4 cup 

Colourful capsicums 100g

Tomato puree 1/4 cup

Red Paprika 1/2 tbsp

Jalapenos pickled 2 tbsp

Method

  • Heat a non-stick pan. 
  • Add the onions and garlic
  • Saute for few mins
  • Add the cauli-rice, salt and rosemary herb.
  • Saute and add water. Cover and cook for 5 mins. 
  • Remove the lid and add in the tomato puree and red paprika. Saute for 1 min.
  • Add the pickled jalapenos. 
  • Saute again for few mins.
  • Serve hot. 
  • Enjoy!!!
