Baked Stuffed Potatoes

A Continental dish, loved by all. It can be used as a starter or as the main side dish for A meal too. You would enjoy the smooth mild flavours of vegetables and cheese. The tempting look makes you hungry. So cook and savour it. 

Preparation time: 15 mins
Cooking time: 20 mins
Serves: 4

Ingredients:
Potatoes
Yellow Capsicum finely chopped 20g
Broccoli finely sliced 10g
Tomato finely chopped  15g or 1tbsp
Cream cheese 1 tbsp
Grated cheese  30g
Butter 1tbsp
Salt & pepper 
Chilli flakes

Method:

  • Slice the potatoes lengthwise into two and put to boil in a pan with little salt,  till half boiled. 
  • Heat the oven to 200c, if using an oven.
  • I have used an Electric Tandoor so no temperature control. It has to be hot. 
  • In a mixing bowl add all the vegetables,  cream cheese, grated cheese too,   salt and pepper. Keep it aside. 
  • When the potatoes are half done. Take it out on a plate and cool it for 3 Mins. 
  • Then scoop the potatoes. 
  • Cut finely some scooped portions and mix it in the mixture. 
  • Now butter the potatoes inside out and fill it with the mixture. 
  • Sprinkle cheese and transfer it on a parchment sheet and bake in the oven for 15 mins, or in the Tandoor for 10 mins
  • Take it out and serve on a serving plate decorated with Chilli flakes.
