Handvo is a traditional Indian Gujarati dish It is a very popular dish. It's an Indian Savoury cake, full of Vitamins and minerals, and the Keto version is no less. So do make and enjoy it. You can make and store it and carry also wherever you move around.

Ingredients
For Mixture:
Bottle gourd chopped 100g
Ginger 1 slice
Green chillies 2-3 slit pieces
Salt 1 tsp
Sugar-free stevia 1/2 tsp
Citric acid 1tsp
Olive Oil 1 tbsp
Red Chilli powder 1/2 tsp
Turmeric powder 1/2 tsp
Asafoetida 1/2 tsp
Almond flour 30g
Psyllium 1tbsp
Flaxseed flour 20g
Hung curd 1 tbsp
Paneer grinded 100g
Water optional
Baking soda 1/2 tsp
For the making of Handvo
Olive Oil 1 tbsp
Mustard seeds
Green chillies split. 7-8
Curry leaves 6-7
Sesame seeds 1 tsp
Coriander leaves finely chopped 2 tsp
Method
Making of the Mixture:
In a chopper or food processor add ginger, green chillies and Bottlegourd, grind it coarsely.
Take this mixture out in a big bowl
Add salt, sugarfree, citric acid, oil and mix it.
Then add Red chilli powder, turmeric powder and Asafoetida, mix it thoroughly.
Then add almond flour, Psyllium husk and Flaxseed flour, mix it.
Then add hung curd, then add paneer, mix it properly. Then add baking soda to it. Mix it
Making of Handvo:
Heat a pan, add oil, then add mustard seeds, green chillies, Saute it, then add curry leaves and lastly add the sesame seeds.
Now put the mixture, flatten it by tapping with the spatula and cover and cook for 5 mins on a slow flame.
Now we need to cook the top portion.
Now take another big pan or nonstick tawa, heat and grease it with oil and then transfer the Handvo in such a way that the top portion goes on the pan or tawa as shown in the video.
Cook it also on a slow flame for 5 mins.
Now take it out on a plate. Cut it with a pizza cutter or a knife.
Serve hot with green chillies and sprinkle coriander leaves.
