India is a land of Diversity, whether it's Culture, language, people, or FOOD. South Indian food is one of them. Its cuisine is loved and eaten on a regular basis by everybody. And one of the main dishes is Medu Vada. Being on Keto We shouldn't miss this, So here comes an easy and quick version of Medu Vada in Keto style.
Preparation time: 10 mins
Cooking time: 10 mins
Serves: 3
Ingredients
Almond flour 1 cup
Coconut flour (desiccated ) 1/2 cup
Psyllium husk 1 tbsp
Xanthan gum 2 tsp
Salt, 1/2 tsp
Baking powder 1/2 tsp
Cumin seeds 1tsp
Peppercorns freshly crushed 1tbsp
Ginger finely chopped 1tsp
Green chillies finely chopped 2tsp
Coriander leaves finely chopped 2tbsp
Water as required
Oil for frying
Method
- In a bowl add all the dry ingredients, viz almond flour, coconut flour Xanthan gum, salt, and baking powder
- Mix it thoroughly.
- Then add ginger, green chilli, peppercorns, cumin seeds and coriander leaves.
- Mix it.
- Make a soft dough out of it, by mixing little water.
- Cover and leave for 5mins
- Take a small portion of the dough and roll it and flatten it and make a hole in the middle like in Medu vada or Doughnuts.
- Make as many possibilities with it.
- Now heat oil in a pan and fry 3 - 4 pieces in medium heat until golden colour and crisp.
- Take it out and fry other pieces too.

Please advise exactly which brand or what type of coconut flour is used. My experiments have failed because of the wrong flour.
