Keto Pumpkin & Poppy Seeds Muffins (Veg & Eggless)

Pumpkin is a keto friendly Vegetable and the combination of pumpkin & Poppy seeds Is too good.  Do make & Enjoy it.




Preparation time: 15 mins
Cooking time: 15 mins
Serves 9 pieces

Ingredients
1st Step
Almond flour 9 tbsp
Flaxseed flour 2 tbsp
Baking powder 1 /2 tsp
Baking soda 1 /2 tsp
Salt 1tsp
Oil 3 tbsp
Apple cider vinegar 1tbsp
Water 1 tbsp

2nd Step
Pumpkin 150g
Poppy seeds 2 tsp
Cinnamon powder 1/2tsp

3rd Step
Muffin tray
Muffin paper cups

Method
1st Step
In a jar of the mixer grinder add all the dry ingredients and churn it.
Then add all the wet ingredients and churn it.

2nd Step
In another jar of the mixer add the pumpkin pieces and puree it.
Then add this mix to the 1st Step jar and add Cinnamon powder and Poppy seeds to it.
Churn for 15 Sec
Take the mixture out in a bowl

3rd Step 
Take a Muffin tray and put the paper muffin cups on it.
Meanwhile, preheat the oven to 200c.
Now scoop the mixture 1tbsp or more depending upon the size of your muffin cup and tray. It should not be more than 3/4th filled.
Now bake it for 15 mins
Take it out and let it cool.
Serve with your choice of dip or have it like this.
