Keto Chai Masala Muffin (Eggless)

These muffins are so rich in flavours plus its so easy to prepare, that I make it at home before one batch finishes. So make and enjoy!!!


Preparation time: 15mins
Cooking time: 20 mins
Serves: 6 pieces

Ingredients
Dry mix
Chai masala
Almond flour 1 cup
Baking powder 1/2tsp
Stevia sugar-free 1/4 cup
Chai masala or Tea Masala 1/2 tbsp
salt a pinch

Chai Masala Mix (if making at home):
1 tbsp cinnamon powder
2 tsp ginger  powder
1 tsp cardamom  powder
1/2 tsp black pepper powder
1/2 tsp cloves  powder

Wet  mix
Flax egg (flaxseed flour1/4 cup in 3/4 cup water)
Hung curd 2 tbsp
Vanilla extract 1/2 tsp
Oil 2 & 1/2 tbsp

For Glazing
Chai masala 1 tsp
Stevia sugar-free 1 tsp


Method

  • Preheat the oven to 200c
  • In a bowl mix all the dry mix.
  • In a bowl mix all the Wet Ingredients
  • Then slowly add the dry ingredients to the wet bowl and mix it to make a thick batter.
  • Now grease a muffin tray or put silicone moulds or paper cups in it.
  • Pour a ladle of the mixture in the mould.

For Glazing

  • Mix the tea masala & stevia and sprinkle over the unbaked muffins.
  • Now bake it for 15-20 minutes
  • Take it out from the oven and you can serve hot or store it in the refrigerator for 1 week and indulge when you want to
