Method
Step 1
- Mix flaxseed flour and water and keep it aside. This is the flax egg preparation.
- Mix hung curd and water to make buttermilk.
- In a big mixing bowl add the almond flour, cinnamon powder, salt, stevia, and baking powder.
- Mix it thoroughly.
- Now add the prepared flax egg and buttermilk and mix it thoroughly.
- Add water if the batter is very very thick.
- Now heat a nonstick pan.
- Grease it with oil
- Add a ladle full of batter
- Let it spread.
- Sprinkle some oil
- Let it cook on slow to medium flame.
- Then with the help of spatula toss and turn and ket, it cooks on the other side too.
- Take it out on a plate
- Heat a small pan.
- Add blackberries to it.
- Add the stevia - erythritol mix and stir.
- Water will seep out.
- If it doesn't then add little water and let it cook on a slow flame
- Once the berries turn soft add chia seeds and let it cook on slow flame.
- Now let it cook until it thickens and have a consistency of jam or sauce.
- Now take it out in a bowl.
- Take a plate and serve the pancake and top it with the blackberries jam/sauce.
- Enjoy!!!
