Keto Khichdi with Masala Papad

One of the Easiest and Tasty dish one can have on Keto. It is a very famous and regular meal prep in India prepared with a combination of Rice and lentils.


Preparation time: 10 mins
Soaking Time: 1/2 hour
Cooking time: 15 minutes
Serves: 2

Ingredients
For Khichdi
Chia seeds 2 tbsp
Cabbage finely chopped 50g
Spinach finely chopped 50g
Cloves 4-5pieces
Bay leaf 1
Cumin seeds 1 tsp
Turmeric powder 1/2 tsp
Salt to taste
Asafoetida powder 1/2 tsp
Green chillies finely chopped 1 tsp
Ginger finely chopped 1 tsp
Red chilli powder 1/2 tsp
Hung curd1 1 tbsp
Ghee/clarified butter 2 tbsp

Finale
Hung curd 1 tbsp

For Masala Papad
Cheese slice 2
Black pepper powder 1/2 tsp
Red chilli powder 1/2 tsp

Method
For Khichdi
  • Soak the chia seed in 1 cup water for at least 1/2 hour
  • Heat a deep pan.
  • Add ghee to it.
  • Add cloves, bay leaf,  then add cumin seeds.
  • Then add asafoetida, ginger, green chillies.
  • Saute it a bit, then add red chilli powder.
  • Then add cabbage and spinach.
  • Saute it and then add the turmeric powder and salt.
  • Saute a bit and cover and cook until the vegetables become tender when tender add the Chia seed mix and then add water and let it cook for some minutes.
  • After it thickens,  then add the hung curd to it.
  • Saute it continuously, until ghee separates.
  • It's ready to be served.
For Masala Papad
  • Take a parchment sheet and put the cheese slices over it.
  • Now with a bowl cut a round shape onto it. Do not throw away the leftover cut portions spread it separately on the sheet
  • Microwave the sheet for 2 minutes or grill it for 7-8 minutes until it becomes crispy.
Finale
  • Serve the khichdi with Masala papad and hung curd.
  • Enjoy!!!
