Khichdi
is a traditional Indian cuisine which is enjoyed by every age group.it is a gut-healthy meal and its also gluten free too. And the 3 layered Khichdi packs a
complete meal with all the minerals, vitamins and nutrients too. Enjoy!!!

Ingredients
For the
khichdi
Rice 50g
Dal 30g
Cumin
seed 1 tsp
Asafoetida
1/2 tsp
Cloves
2-3
Cinnamon
stick 1
Bay leaf
1
Ghee 1
tbsp
Salt to
taste
Turmeric
powder 1/2 tsp
Vegetable Layer
Onion
chopped 40g
Cauliflower
30g
Corn
kernels 20g
Carrot
30g
Mixed
Colourful Capsicum 40g
Potato
30g
Peas 20g
Ghee
1tbsp
Salt to
taste
Herb 1
tsp or few leaves 9f choice
Curd Layer
Hung curd
1 tbsp
Cheese
50g
Garlic
finely chopped 1tsp
Salt to
taste
Method
For the
khichdi
Heat a
pressure pan.
Add ghee
to it.
Then add
cumin seeds to it.
Then add
the bay leaf, cardamom pieces, cloves, and cinnamon stick.
Then add
asafoetida powder and saute it.
Then add
the soaked rice and dal
Saute it.
Add the
turmeric powder and salt.
Add
boiling water to it.
Cover and
give 2 whistle
For the
Vegetable Layer
Heat a
pan.
Add ghee
to it.
Add
onions and fry till pink.
Then add
all the vegetables one by one, except the capsicums
Add water
2 tbsp.
Add salt.
Cover and
cook until the vegetables become tender.
Now add
the capsicums and again cover and cook for 1 minute.
Keep it
aside in a bowl
Curd
layer
In a
mixing bowl, add all the ingredients and give it a thorough mix.
Finale
Preheat
the oven to 200c
Grease a
Baking dish with oil.
Now put the 1 st layer about 2 inches of the khichdi.
Spread it
out evenly.
Then
spread the vegetable layer evenly.
Finally
spread the curd layer evenly.
Bake it
for 20 minutes.
Grill for
5 minutes to get a charring effect. This is optional.
Take it
out.
Divide
into 4 servings
Serve
hot.
