Who said during Navratri or during Fasting you cannot enjoy the Cupcakes or Muffins. This is a Super easy & tasty dish, and one can enjoy guiltfree during the Falihari Fast even.
Preparation time: 10 mins
Cooking time: 20 mins
Serves: 6
Ingredients
Dry mix
Kuttu Atta/Buckwheat flour 1 cup
Baking soda 1 tsp
Cinnamon powder 1/2 tsp
Wet mix
Banana medium size 1
Brown sugar/ Darmera Sugar 1/2cup
Oil 1/4 cup
Curd 1/4 cup
Finale
Walnuts chopped 20g
Cashew nuts chopped 20g
Raisins 20g
Oil to grease
Method
Press the banana while it is in the skin.
Then take it out in a mixing bowl.
Mash it properly.
Now add all the other remaining wet ingredients and mix it well until it becomes a homogeneous mixture.
Then put a sieve on top and put all the dry ingredients.
Now sieve it and then mix it properly.
Finale
Preheat the oven to 190°c.
Add the cashew nuts, raisins, and walnuts to the batter, keeping aside a tsp of walnuts.
Now take a muffin tray and put silicone mould or cupcake liners.
If not using any liners then grease the muffin tray. I have used silicone moulds so I greased the muffin moulds only.
Now fill the moulds 3/4th.
Now make a fine mixture of brown sugar and the remaining walnuts(which are chopped finely again)
Sprinkle on top over all the batter in the moulds.
Now put it for baking at190°for 20 mins
Take it out and let it cool.
Serve hot with Tea or Coffee or store in the refrigerator and one can have when one wants too.

Recipe Notes: if you don't get Kuttu atta or the buckwheat flour then buy the groats form and just churn it in a mixer and you will get the flour.
