These cheese Cupcakes are truly heavenly for the vegetarians and eggless people. They are easy to carry, truly a Keto Easy Travel Food and can be prepared within minutes. One can add variety by adding different herbs or spices. If making with fresh veggies then its shelf life would decrease otherwise with dry herbs and spices one can store for more then 15 days,

Different brands of cheese slice will rise differently. I used Amul cheese slices which rose maximum.

Method
- Take Silicone muffin moulds
- Grease it.
- Remove the wrapper of the cheese slice and cut the cheese slice into 4 pieces.
- Put slices of cheese into the mould on top of each other like a stack.
- Microwave for 60-90 sec.
- Take it out and let it cool.
- Demould it and enjoy.
Variations:
- I added red chilli flakes in one
- In another added pizza spice.
- In another added finely chopped coriander leaves
- When we add different spices add it after 2 layers and then sprinkle some on top.
- This goes for the freshly chopped veggies even.
