My Favorite Keto Lemon Rice Recipe

This is one of my favourite recipe which I have at least twice a week. its a keto version of a very famous south Indian dish  LEMON RICE. And I enjoy this with peanuts even. One can even add dry red chillies for additional flavours. Since I did not have it at the time of making the video, I could not use it. So make and enjoy this so very easy dish and I bet it will become a staple. The lemony taste is truly enigmatic.


Preparation time: 5 mins
Cooking time: 10 mins
Serves: 1

Ingredients
Ghee/Vegan butter 2 tsp
Mustard seeds 1 tsp
Peanuts 1 tbsp
Green chillies  chopped 1 tsp
Ginger chopped 1/2 tsp
Curry leaves a few pieces
Asafoetida powder 1/4 tsp
Turmeric 1/2 tsp
Cauli-rice 200g
Salt 1/2 tsp
Water 3 tbsp
Lemon 1 juice
Coriander  leaves finely chopped

Method
  • In a nonstick skillet adds ghee.
  • Then add mustard seeds and saute for 1 minute.
  • Add the peanuts, saute till it becomes crispy.
  • Add in all the other ingredients except lemon and coriander leaves, one by one, sauteing in between.
  • Now after adding the water saute for few seconds and cover and cook for 5 minutes.
  • Uncover, add in the juice of 1 lemon.
  • Shut the stove.
  • Add the coriander leaves and serves hot.
  • Enjoy!!!
