Savoury Veggie Muffins (Eggless & Glutenfree)

These Savoury Muffins are glutenfree and super delicious and are also very easy to make. They are loaded with vegetables and one can add whatever veggies one have and enjoy these muffins. They are an easy carry food and can be eaten at any time of the day.


Preparation time: 10 mins
Cooking time: 20 mins
Serves: 9 pieces

Ingredients
In the order used
Chickpea flour 1 cup
Sorghum/jowari flour 1/2 cup
Mozerella cheese 40g
Curd 1/2 cup
Salt 1tsp
Black pepper powder 1tsp
Garlic 1 tsp
Spinach chopped 40g
Tomatoes finely chopped 3 tbsp
Capsicum 2tbsp
Pumpkin 2 tbsp
Water 1/2 cup
Coriander finely chopped 1 tbsp

Method
• Preheat the oven to 180c.
• In a mixing bowl add all the ingredients one by one keeping the coriander leaves separately.
• Mix it up thoroughly.
• Grease the muffin tray and drop the batter into it,  filling 3/4th only.
• Sprinkle some coriander leaves over it.
• Now bake for 20 mins.
• Take it out and enjoy with your favourite dips and sauces.
