A super healthy, protein-rich, nut rich, and flavourful ragi- oats muffin, which you can have guiltfree as it is dense in vitamins, minerals and fibre too. One can make sugarfree also, just avoid jaggery and add an equal amount of healthy sugar-free powders to it.

Ingredients
In the
order of using
Wet Mix
Curd 1/4
cup
Oil 1/4
cup
Mix of
Milk1/4 cup & vinegar 1/2 tsp
Jaggery
1/2 cup
Dry Mix
Ragi
flour 1 cup
Baking
soda 1/2 tsp
Baking
powder 1/2 tsp
Oats1/3
cup
Walnuts
chopped 2 tbsp
Chocolate
chips 2 tbsp
Method
- Preheat the oven to 190°c
- In a big mixing bowl and add all the wet ingredients and give a good mix.
- Now put a sieve over the wet ingredient bowl and add the ragi flour, baking soda and baking powder and sieve it.
- Mix the dry ingredients into the wet ingredients.
- Now add the oats.
- Now add the walnuts and chocolate chips keeping each a little aside for topping.
- Grease the muffin tray or the silicone moulds.
- If using paper liners then no need to grease it. Just put the paper liners into the muffin tray.
- Drop the mix into the moulds.
- Bake at 190°c for 20 minutes.
- Take it out and with the help of the toothpick check if it's done. If not then bake for 5 minutes or more until done.
- Let it cool
- Demould it and Enjoy.

- One can store these muffins in room temperature for 5-6 days.
- A very good mini-meals for that small hunger.
- One can bake in a cake tin and slice and enjoy it even.
