Gulab Jamun, the name of it brings water in the mouth. it is fried balls soaked in sugar saffron water and the keto version is simply awesome. This melt
in the mouth sweet or dessert is one dish that is always a killer. And the
keto version is no less.
Preparation

Serves: 12 pieces
Ingredients
Step 1
Almond
flour 1/3 cup
Xanthan
gum 1 tsp
Baking
powder 1/2tsp
Cottage
cheese/paneer 200g
Step 2
Xylitol 1 cup
Water 3/4
cup
Saffron
strings a few strings
Saffron
colour few drops
Lemon
juice 1/2 tsp
Step 3
Ghee/clarified butter/oil for frying

Method
Step 1
- In a mixing bowl add all the dry ingredients and mix it thoroughly.
- Then add the cottage cheese/paneer into it and mix it and make a soft dough out of it by kneading well.
- Now take small portions and roll out small balls out of it.
Step 2
- In a deep pan add sugarfree xylitol and water and mix it.
- Boil it by stirring continuously for 10 mins on a medium to slow flame.
- Add saffron strings and the saffron colour to it.
- Add lemon juice and keep it aside.
Step 3
- Heat ghee in a kadai and fry the rolled balls till it turns golden. Take it out and dip in the sugar syrup.
- Let it sit in the sugar syrup for more than 2 hours.
- Now serve and enjoy!!!

Madam, Can we use psyllium husk instead of xanthum gum?
