Keto Cookies with Homemade Thandai Powder | Holi Special

Holi festival or the festival of color is incomplete without the Thandai, And this year what better way to have Thandai then to have it in cookies form. It can be stored and can be enjoyed for a long time too.


Preparation time: 15 mins 
Cooking time: 12-15 mins
Serve: 14 Cookies & 18 tbsp of Thandai powder

Ingredients
For the Thandai powder
Almonds  30g 
Pistachios 30g 
Poppy seeds 1 tbsp
Melon seeds 3 tbsp
Green cardamom 8 pieces 
Fennel seeds 2 tbsp
Black peppercorns 1 tbsp
Dried rose petals 2 tbsp

For the Cookies
Step 1
Flaxseed flour 1tbsp
Water 2 tbsp
Oil 1 tbsp
Rose essence 1/2 tsp
Saffron essence 1/2 tsp
Saffron/yellow colour 1/2 tsp

Step 2
Almond flour 1 cup
Thandai powder 2 tbsp
Stevia sugarfree 2 tbsp
Baking powder 1/2 tsp

Finale
Almond pistachios finely chopped slivers 1 tbsp
Oil 1 tsp


Method
For the Thandai powder
In a mixer jar blend all the ingredients together at a high speed until it forms a fine powder. 
store it in an airtight container in the fridge

For the Cookies
Preheat the oven to 189c
Step 1
Mix flaxseed and water and keep it aside for 10mins.
Then add all the other ingredients and mix well

Step 2
In a big mixing bowl add in all the dry ingredients and give it a magic mix.
Now add the prepared wet ingredients from step 1 into step 2.
Mix and form a dough.

Finale
Wash your hand and add oil to the dough and knead it well.
Grease your palm and take small portions and roll it out in between your palm and press and place it on the nonstick  baking tray.
If the tray is not nonstick the place parchment sheet or silicone mat in the tray.
Similarly roll out all the cookie dough.
Now press little nut mix on all the cookies.
Bake it at 189c for 12-15 mins.
Take it out and ket it rests for 15 mins.
Have a bite of the lovely  thandai flavored cookies.
