No-Bake Puffed Amaranth Energy Bars | Rajgira Granola Bars

Amaranth is a gluten-free seed and is very rich in Manganese and magnesium too. It is light on the stomach and has inflammatory properties too. The energy bars are perfect as a snack even for the fasting periods too.



Preparation time: 10 mins Refrigeration time: 2 hours Serves: 8 pieces


Ingredients
Step 1
Puffed amaranth 1 cup
Roasted mix of almonds and walnuts roughly chopped 1/2 cup
Dried cranberries 1/2 cup

Step 2
Warm Butter 50g
Warm honey 100g
Warm peanut butter 100g

Method

  • Line a 8inch square tin with butter paper and grease it.
  • Keep it aside
Step 1

  • In a mixing bowl, mix all the ingredients of step 1 and mix it thoroughly.
Step 2

  • In a big bowl add in all the warmed ingredients and give it a magic mix.
Finale

  • Drop the dry ingredients mix into the wet ingredient bowl and mix it thoroughly.
  • Now take out this mix in the greased tin.
  • And press it hard, removing any air and packing it, so that it forms an even layer.
  • Refrigerate it in the fridge for 2 hours.
  • Take it out and cut into desired shapes of 8/12/16.
  • Serve and Enjoy.
  • Store it in an airtight container.
