Keto Bibingka (Baked Coconut Flour Cake) | Low Carb

A classic Filipino celebration dessert which is made with rice, and the keto version and that also eggless is equally worth the taste. Enjoy!!!


Preparation time: 10 mins 
Cooking time: 15 mins
Serve: 6


Ingredients
Step 1
Desiccated coconut 1 & 1/2 cup
Baking powder 1 tsp
Stevia sugarfree 1/2 cup

Step 2
Coconut milk 200g/1 cup
Banana essence
Oil 1/4 cup
Cottage cheese/paneer 50g

Finale
Desiccated coconut 1 tbsp

Method
Preheat the oven to 180c
Step 1
  • Mix all the ingredients and keep it aside.
Step 2
  • Mix all the ingredients and give it a magic mix
  • Now mix the dry ingredients from step 1 into the wet ingredients bowl and give it a gentle mix.
Finale
  • Grease a baking dish and line it with the banana leaf if one can get hold of it or use parchment paper.
  • Drop the batter into it.
  • Sprinkle the desiccated coconut over it.
  • Bake at 180c for 15- 20 mins
  • Take it out and let it rests.
  • Transfer into a plate.
  • Enjoy!!!
