No Mess Veg Pulao

This no-mess veg pulao is a perfect dish for the lockdown when the only thing we need is easy no clutter cooking, which is filling and is a complete meal and plus tasty too. Enjoy!!!

Preparation time: 10 mins 
Cooking time: 15 mins
Serve: 4

Ingredients
Step 1
Basmati rice 1 cup

Step 2
Ghee/vegan ghee 1tbsp
Cumin seeds 1tsp
Cinnamon stick 1-2
Cloves4--5
Bay leaf 1
Cashewnuts 1 tbsp
Raisins 1 tbsp
Paneer/ cottage cheese 100g
Mix vegetables  200g
Turmeric powder 1/2 tsp
Red chilli powder 1/2 tsp
Coriander powder 1/2 tsp
Garam masala 1 tsp
Salt 1 tsp

Method
Step 1
  • Soak the rice in water for 10 mins
Step 2
  • Heat a nonstick pan
  • Add the ghee to it
  • Add one by one all the ingredients of step 2
  • Inbetween saute for few secs
  • Now add the rice removing the water through a sieve.
  • Saute for 2 mins.
  • Add water in the ratio of 1: 2. That is 1 part of rice and 2parts of water.
  • Ad 1/2 cup more water for the vegetables too.
  •  Cover and cook for10 mins.
  • Remove the cover. 
  • Serve hot with salad and masala curd.
  • Enjoy!!!
