#1 Fudgy & Gooey Sweet Potato Fudge

A simple and equally easy & tasty sweet, which is perfect for any Vrat or Fasting, and especially for MahaShivratri too. One can enjoy guilt-free as its healthy too.💗💗

Preparation time: 10 mins
Cooking time: 15 mins
Serves: 16 pieces


Ingredients
Step 1
Sweet potatoes 250g

Step 2
Almond flour 1/4 cup
Brown sugar 1/2 cup
Cardamom powder 1 tsp
Ghee/clarified butter/vegan butter 2 tsp
Almond slivers 1 tbsp

Method
Step 1
Slice the sweet potatoes and steam it in a vessel covered until it becomes tender.

Step 2
Cool the steamed sweet potatoes and remove the skin.
Mash it with a fork or masher, until it's fine.
Add all the other ingredients and mix it thoroughly.
It will form a soft dough.
Grease a square dish with butter paper on it.
Transfer the sweet potato mixture into it.
Smoother and flatten it out.
Sprinkle the chopped almond slivers and press it slightly.
Keep it in the fridge for 15 mins to set.
Take it out and transfer it from the square dish to a plate.
Cut it into squares.

#2 Crispy & Crunchy Sweet Potato Fries
Fries are one snack, which everybody loves. Well, the potato french fries are too calorific and full of fats with little nutritive value. But having these baked sweet potato fries is like enjoying this yummy snack guiltfree, full of nutrients, with low glycemic index and also less calorific too. Enjoy!!!

Preparation time: 15 minutes
Grilling time: 12-15 minutes
Serves: 4

Ingredients
Sweet potatoes 500g
Olive Oil 2 tbsp
Salt 1 tsp

Preparation of the coating
Peanut granulated
Ginger & garlic powder 1 tsp
Rosemary/any herb of choice
Red chilli powder  1 tsp
Sugar powder 1 .5 tsp

For the Dip
Hung curd/greek yogurt 2 tbsp
Thyme 1/4 tsp
Garlic paste 1/4 tsp
Salt 1/2 tsp
Mayonnaise 2 tbsp

Method
  • Wash the sweet potatoes thoroughly removing any mud or gunk.
  • Now slice it into 1/2inch thick and roughly about 3 inches long strips.
  • Put all the fries in a big mixing bowl with lid.
  • Now add the oil and salt.
  • Put the lid on the mixing Howland shake for few seconds so that all the sweet potatoes are properly coated with oil and salt completely.
Preparation of the coating
  • In a rimmed plate adds the ingredients and gives it a good mix.

For the Dip
  • Mix all the ingredients and give it a good mix.
Finale
  • Place the parchment sheet on the baking tray. 
  • Roll each sweet potato sticks in the coating mixture from all sides and place it on the parchment sheets side by side. 
  • Grill it in the oven in the griller mode for 12-15 minutes or more until crisp and crunchy from outside and soft from inside.
  • Take it out.
  • Serve hot with the dip.
  • Enjoy!!!
