Some recipes tend to become close to your heart. And yes, this recipe belongs to that category. Firstly it's very easy and secondly & most important cause it was made by my son @mehuldalmia for a surprise mood zesting feel. And I am not going to forget it. It tasted super yummy. Ingredients
Roasted Eggplant 250g
Zaatar spice 2 tbsp
Extra virgin olive oil 2 tbsp
Mozerella cheese 50g
Zaatar Spice mix
2 tablespoons dried oregano 2 tablespoons sumac 2 tablespoons sesame seeds 1 tablespoon cumin powder 1 tablespoon dried thyme 1 teaspoon fine sea salt
Method
- In a mixing bowl add the roasted eggplants.
- Mix the olive oil into the zaatar spice & give a magic mix.
- Drop 1 tbsp of the spice mix into the eggplant and give it a magic mix.
- Keep it aside for marination for 15 mins.
- Now take baking plates and grease them.
- Put parchment sheets and again grease the parchment sheet too.
- Drop a portion of the eggplant on each plate.
- Spread it out.
- Sprinkle the mozzarella cheese over it.
- Drop the zaatar mix in the middle and spread it out.
- Grill for 5-7 mins or bake in a preheated oven at 200c for 10 mins.
- Take it out.
- Scrape the sides and transfer to a serving plate.
- Enjoy!!!
