Summertime or Rainy time or Anytime, Seekh Kabab can be relished always. And a Keto and a Veg version are no less. So easy to make and equally Tasty. So Enjoy it.

Ingredients
For making the Vegetables:
French beans chopped 30 g
Red Capsicum chopped 30g
Yellow Capsicum chopped 30g
Cabbage chopped 150g
Ginger chopped 1-inch piece
Green chillies chopped 2
Oil1tbsp
Salt 1 tsp
Red chilli powder 1 tsp
Turmeric powder 1/2 tsp
Red chilli powder 1 tsp
Turmeric powder 1/2 tsp
For making the mixture:
Paneer grated 100g
Flaxseed flour 1 - 2 tbsp
Garam masala or Allspice masala 1tbsp
Roasted Cumin powder 1tsp
Red Chilli powder 1tsp
Salt according to taste
Oil for greasing and cooking 2 tbsp
Wooden sticks or kabab sticks 4
Method
For making the vegetables:
- In a deep pan heat Oil.
- Then add Ginger green chillies, Saute a bit.
- Then add french beans, red and yellow capsicum and Cabbage.
- Saute it.
- Then add salt, red chilli powder and turmeric powder and mix it.
- Cover and cook for 5 - 7 mins, till the vegetables become tender.
- Remove the cover and transfer the mixture to a food processor or chopper or grinder jar.
- Grind it to a paste form.
- Now transfer into a mixing bowl.
For making the mixture:
- Now to this Vegetable mixture add grated Paneer.
- Add salt, roasted cumin powder and Garam masala. Mix it.
- Add Flaxseed flour according to consistency,
- Mix it and knead it. If the dough is soft add more Flaxseed flour.
- Now grease your hand and take a big portion of the dough about 1/4th.
- Roll it and form a cylindrical shape.
- Insert a wooden stick, and keep it aside.
- Make all the Seekh kabab like this.
Finale:
- Heat a Grill pan, and brush it with oil generosity.
- Put 2 kababs at a time, so that there is space for one to toss and turn.
- Cook it on medium flame until it turns golden.
- Grill it from all the sides, be careful while turning each Seekh.
- Now shut the stove and serve it.
- Serve with green coriander minty garlic chutney, or with garlic mayo dip, whatever you prefer, and with Onion rings.
- Enjoy it with your friends and family.
Note:
Wooden sticks have to be soaked in water for 2 hrs if using an oven for baking.
Bake it for at least 15mins or more on 200c.
