Keto Stuffed Pockets Veg & Eggless

 These are very easy to make and one can serve as a starter or one can carry along for tiffins too.  it's fulfilling for the tummy too. One can make Big Pockets and enjoy them as Stuffed Paranthas even. With the dough, one can even make Rotis/Tortillas/Burritos/ Quesadillas etc. Enjoy!!!


Preparation time: 15 mins
Resting time: 10 mins
Cooking time: 15 mins
Serves: 10 pieces

Ingredients
For the pockets
Coconut flour or desiccated 1 cup
Psyllium husk 2 tbsp
Salt 1/2tsp
Oil 1 & 1/2 tbsp
Warm water for kneading approx 1 cup
Ghee or Clarified butter 2 tbsp

Stuffing 1(for 5 Pockets)
Colourful Capsicum 50g
Ginger chopped 1/4 tsp
Green chillies chopped 1/4 tsp
Salt to taste
Garam masala a pinch
Cheese slice 1& 1/4th

Stuffing 2(for 5 Pockets)
Spinach finely chopped 40g
Cheese chopped 30g
Ginger chopped 1/4 tsp
Green chillies chopped 1/4 tsp
Salt to taste

Finale
Butter melted 20g for all the Pockets

Method
In a mixing bowl add coconut flour/desiccated, psyllium husk, salt and oil and mix it thoroughly
Make a soft dough using warm water.
Cover and keep aside for resting.
After 10 mins uncover and knead it again.
Now take 2 sheets of Parchment paper and put a portion of dough and in between the sheet and press with your palm and fingers,
Then roll it with the rolling pin, almost round and thin too.
Cut roundels about 2 & 1/2-3 inches.
For 1 pocket you require 2 roundels.
The dough will give approximately 10 pockets

Stuffing 1
Mix all the ingredients leaving the cheese aside.
Slice the cheese slices into 4 pieces.
Take a roundel and place 1 cut cheese slice in the middle and then the stuffing.
Place the second roundel over it and seal the ends of the two with the help of a fork.
Repeat for all.

Stuffing 2
Mix all the ingredients,
Take a roundel and place the stuffing in the middle.
Place the second roundel over it and seal the ends of the two with the help of a fork.
Repeat for all.

Finale
Preheat the oven to 200c
Now apply Melted butter on the roundels and put it on a baking tray and bake for 10-15 mins.
Alternately you can shallow fry on a nonstick pan also till golden.
Serve hot with your choice of Dips or Chutney.
