Jambalaya as the name means Jumbled up is a very interesting Louisiana cuisine which has an influence of Spanish, French and West African cuisine. Basically, it is made of meat veg and rice, since mine is a veg version, so no meat in it. The Cajun spice which is the main spice gives it a very authentic flavour, and its a very easy to make spice at home. Enjoy!!!

Ingredients

Rice 1/2 cup

Red paprika 3 tbsp
Salt 2 tbsp
Onion powder 2 tbsp
Garlic powder 2 tbsp
Red chilli flakes 1 tbsp
Black pepper powder 1 tbsp
White pepper powder 1 tbsp
Oregano 1 tbsp
Thyme 1 tbs

Butter 50g
Garlic finely chopped 1 tsp
Onion chopped 1
Tomatoes 1 large
Tomato puree 50g
Tomato paste 1 tbsp
Tomato sauce 1 tbsp
Green capsicum chopped 1 small
Red capsicum chopped 1 small
Sweet corn 50g
Basmati rice 1/2 cup
Water 1 & 1/2 cup

Butter 50g
Garlic finely chopped 1 tsp

Tomatoes 1 large
Tomato puree 50g
Tomato paste 1 tbsp
Tomato sauce 1 tbsp
Green capsicum chopped 1 small
Red capsicum chopped 1 small
Sweet corn 50g
Basmati rice 1/2 cup
Water 1 & 1/2 cup
Cajun spice 1 tbsp
Method
Step 1
- In a bowl add rice and add water to it and soak the rice for 10 mins
Step 2
- Mix all the ingredients and mix it thoroughly to form a homogeneous mixture.
- Keep it in an airtight container.
Step 3
- Heat a pan and add butter to it.
- Add garlic and saute for few seconds.
- Then add all the ingredients one by one sauteing in between except the red capsicum and saute.
- Now add a little bit of salt.
- Drain the rice and add it to the pan.
- Now add the water and the cajun spice about 1 tbsp heaped.
- Mix and cover the Kadai and let it cook on slow flame.
- After 5 mins add the red capsicum and the remaining green capsicum.
- Let it cook till the water vanishes.
- Uncover and serve hot.
- Enjoy!!!
