Ganeshotsav, the festival is just around the corner. Puran Poli is a traditional Indian Maharashtrian sweet which is loved by
everyone. The keto version nevertheless has the same taste and is also very easy to prepare. It's glutenfree and
lactose-free too and can be made vegan just exchange the ghee with vegan oil of
choice. It's deliciously sweet, just
prepare it in advance and store it. It's quite filling and can be prepared
and refrigerated and used whenever required, just take it out from the fridge,
heat it and Enjoy!!!
Preparation

Ingredients
For the
Dough
Almond
flour 1/2 cup
Coconut
desiccated/flour 1_4 cup
Psyllium
husk 2 tbsp
Salt 1/2
tsp
Oil 1
tbsp
For the
stuffing
Yellow
Capsicum finely chopped 150g
Almond
flour 1/2 cup
Sugarfree
stevia 1/4 cup
Cardamom
powder 1 tsp
Ghee 1
tsp
Finale
2 tsp
ghee
Method
For the Dough
In a big
mixing bowl add all the ingredients and
give a good mix.
Then with the help of water knead a soft dough.
Cover and
keep aside.
For the stuffing
Heat a
nonstick pan and add ghee to it.
Then add
the finely chopped capsicum and saute
it.
Add salt
to it and saute it.
Cover and
cook for 5 mins.
Uncover
and add the almond flour.
Saute for
2-3 minutes and then add the cardamom
powder.
Transfer
the mixture into a mixer jar and churn
it.
Take the
mixture out in a bowl and ket it cool. Then add sugar-free stevia to it and
give a thorough mix.
Keep it
aside
Finale
Take the
dough and knead it again. Divide it into 3 portions.
Now take
2 parchment paper. Grease it with oil and roll out one portion of the dough
into thin chapati using either the hand or rolling pins, in between the sheets.
Cut it
into a round shape with a cutter.
Now place
a portion of the stuffing into half of the circular dough.
Spread it
out into a semi-circle leaving edges to press
Now with
the help of the parchment sheet covers the other half on the stuffing and press
it lightly.
Similarly
do for all the portions. And make another portion with the left out cut dough
from all the Puran poli even.
Now heat
a nonstick griddle pan or tawa and brush it with ghee.
Roast
all the Puran polis until golden brown
from both sides.
Serve
hot.

Notes
Cook all
the Puran polis and store it in the refrigerator and when required heat it again and enjoy.
The
tortilla or the Roti can be had separately without the stuffing even with the
gravies.
One can
make wraps even with the dough too.
