Keto Veg Dhansak with Keto Browned Rice | Parsi food

It's Parsi New Year tomorrow, so to celebrate this Festival, let's cook some delicious Parsi food. And Veg dhansak with browned rice is one dish which is always the topmost cuisine made for any Parsi celebrations. And I will be making the keto version of it. The spice is equally delish and aromatic which is the Goddess of these dishes. So enjoy making this with me. Happy Navroz to all! 

Preparation time: 30 mins
Cooking time: 30 mins
Serves: Veg Dhansak 4  servings & Browned rice 1 serving

Ingredients
Step 1
Sunflower seeds 40g

For Dhansak Masala
Corriander seeds 2 tbsp
Cumin seeds 1 tsp
Black cumin seeds 1 tsp
Black peppercorns 6-8
Cloves 5-6
Red chilies dried 4
Bay leaf 2-3
Star anise 2
Nutmeg powder 1/2 tsp
Poppy seeds 1 tsp
Fenugreek seeds 1/2 tsp
Dried fenugreek leaves 2 tbsp

For Browned Rice
Cauli-rice  150g
Ghee 1 tsp
Cumin seeds 1/2 tsp
Garlic  1/2 tsp
Onions 30g
Sugarfree stevia 1/2 tsp
Salt as per taste
Dhansak Masala 1/2 tsp

For Veg Dhansak
Ghee 1 tbsp
Cumin seeds 1 tsp
Garlic finely chopped 1 tsp
Ginger finely grated 1 tsp
Onion 40 g
Bottle gourd 100g
Pumpkin chopped 100g
Eggplant chopped 100g
Turmeric powder 1/2 tsp
Salt 1 tsp
Tomato puree 50g
Corriander and mint leaves finely chopped
Dhansak masala 3 tsp

Method
Step 1

  • Soak the sunflower seeds in water in a bowl and keep it aside

Dhansak masala

  • In a pan put all the Masala or the spices and saute for one minute
  • Take it out in a grinder jar and ground it to a fine powder

Making of Veg Dhansak
Heat a pressure pan and add ghee to it. Then add one by one ingredient and saute in-between.
Do not add the puree and the dhansak spice
Add the soaked sunflower seeds and water and give 2 whistles.
After the pressure is released mash all the vegetables with a masher or a hand blender.
Now add in the tomato puree and the dhansak masala and cook for another 5 mins and it will be done.

Making of  Keto Browned Rice

  • Heat a nonstick pan and add ghee to it.
  • Then add the cumin seeds.
  • Then add the chopped garlic and saute till it becomes brown. Then add the onions and saute it.
  • When it starts turning brown then add sugarfree stevia.
  • Saute for few minutes.
  • Then add the cauli-rice.
  • Then add the dhansak masala and the salt, saute for a minute and then cover and cook on slow flame for 5 mins.
  • After 5 mins serve hot.
  • Enjoy the Veg keto Dhanshak with keto Browned Rice.

Recipe notes

  • One can use fresh fenugreek leaves, if using fresh ones then add in the veg dhansak while adding all the other veggies.
  • I have made 1 serving of rice and 4 servings Of Veg Dhansak.
