A very popular Indian vegetarian dish, which is loved by everyone. Malai means cream and kofta means fried balls. So together they form a beautiful dish fried balls in a creamy sauce which would engulf your senses when you dig into it. Enjoy!!!

Cottage
cheese/paneer 150g
Baking
powder
Xanthan
gum 1 tsp
Salt 1/2
tsp
Cardamom
powder 1/2 tsp

Method
For the Malai Kofta
Step 1
- In a rimmed plate put the cottage cheese and crumble it.
- Add all the ingredients.
- Give it a good mix and make a dough, giving it a good knead.
Step 2
- Take a small portion of the dough and put a little portion of the pistachios sliver in the middle of the ball. Cover it up and roll out round balls out of it
- Follow the same procedure and roll out all the balls.
Step 3
- Heat the oil in a Kadai or wok
- Fry the balls in ghee until golden.
For the gravy
- In a mixer grinder jar add in all the ingredients.
- Churn it to a fine powder.
- Add little water and churn it again into a fine puree.
Finale
- In a nonstick pan add ghee and then add cumin seeds.
- Add the green chilies, ginger one by one and saute it.
- Then pour the pureed mixture from the grinder jar.
- Stir it.
- Add little water in the mixer jar, close and shake it. Pour out in the Kadai.
- Stir it, and then add some more water,
- Stir intermittently and let it boil for 2-3 minutes.
- Add the cream and salt and stir again.
- Adjust the gravy thickness, add water if needed.
- The gravy is done.
- Add the fried koftas into it.
- Serve hot with keto Nan, roti, tortillas.
- Enjoy!!!
